About Cardamom

The third most expensive spice after saffron and vanilla. Known as the queen of spices. It is a key ingredient in chai masala and Scandinavian baking. Guatemala produces 60% of the world supply. It aids digestion and freshens breath - Arabs traditionally add it to coffee. It contains cineole, an antimicrobial compound. The green pods are picked before fully ripe to maintain flavor. Black cardamom has a smoky flavor from drying over fires. Over 100 species exist. It was traded along the Silk Road for thousands of years. It is effective against H. pylori bacteria in clinical studies.
