About Mahleb

Made from the ground seeds of the St Lucie cherry. It has a unique flavor combining cherry, almond, and floral notes. It is essential in Middle Eastern and Greek baking, particularly in Easter breads (tsoureki) and cookies. It has been used in Mediterranean baking for thousands of years. The seeds come from inside the cherry pit. It is relatively obscure outside of Middle Eastern and Greek cooking. A little goes a long way. It loses flavor quickly when ground. Turkey is the largest producer. It is also used in some sausage recipes. The cherry tree is ornamental as well as productive.
