About Garlic

Allicin, produced when garlic is crushed, is one of the most potent natural antibiotics. It was used to treat wounds in both World Wars when antibiotics were unavailable. The Chicago area is named after shikaakwa (wild garlic) in the local Algonquin language. Egyptian slaves building the pyramids went on strike when their garlic ration was cut. It lowers blood pressure and cholesterol in clinical studies. Over 600 sub-varieties exist. Elephant garlic is actually a type of leek. Roasting transforms the flavor completely from pungent to sweet and nutty. Garlic breath comes from sulfur compounds absorbed into the bloodstream and exhaled through the lungs.
