About Juniper Berry

Not actually a berry but the female seed cone of the juniper tree. It is the primary flavor in gin - the word gin derives from genever, the Dutch for juniper. It has a piney, resinous, slightly citrus flavor. It is essential for sauerbraten, choucroute garnie, and game dishes. It has been used medicinally since ancient Egypt. It contains antibacterial and antifungal compounds. Native Americans used it for urinary tract infections. It pairs naturally with strong-flavored meats like venison, duck, and pork. Only blue-black ripe berries are used - green ones are unripe. It grows wild across the Northern Hemisphere.
