About Kaffir Lime Leaf
The hourglass-shaped double leaves are one of the most distinctive flavors in Thai cuisine. They have an intense citrus-floral aroma that is impossible to replicate. The tree produces small, bumpy, extremely aromatic limes. The leaves are used whole in curries and soups, then removed before eating. They are essential in Thai green curry, tom yum soup, and Indonesian rendang. The tree can reach 5 meters. The rind of the fruit is also used in Thai and Cambodian cooking. The leaves can be frozen for months without losing flavor. The name kaffir is considered offensive in some contexts - makrut lime is the preferred alternative.
