Beyond the fruit, lime leaves and zest are essential flavoring agents. Key lime, Persian lime, and kaffir lime all have different properties. Lime zest contains limonene, which has demonstrated anti-cancer properties in lab studies. Lime juice prevents oxidation in guacamole and fruit salads. The leaves are used in Southeast Asian and Mexican cuisines. British sailors were called limeys because they consumed lime juice to prevent scurvy. Limes are actually yellow when fully ripe - green limes are underripe. Key limes are more aromatic than Persian limes. The essential oil is used in perfumery and cleaning products.
