Lavender honey is among the most prized in the world. It repels moths, mosquitoes, and fleas. The French produce 80% of the worlds lavender. It can live 15-20 years. It is drought-tolerant and thrives in poor, alkaline soil. Lavender shortbread and lavender lemonade are classic culinary uses. Over 450 varieties exist.
