About Savory

The most underappreciated herb in Western cooking. The Romans used it as a seasoning and aphrodisiac. It is the dominant herb in Bulgarian cuisine. Summer savory is annual with a milder flavor; winter savory is perennial and more pungent. It contains carvacrol and thymol, giving it antimicrobial properties. It is excellent with beans and legumes - it reduces flatulence, which is why it is called the bean herb. It is a key ingredient in herbes de Provence. It attracts bees. It is easy to grow from seed. It has been used medicinally since ancient Rome for digestive issues.
