About Summer Savory

The classic bean herb - it is traditionally paired with all legume dishes. It has a peppery, thyme-like flavor. It was one of the most popular herbs in ancient Rome. It is the dominant flavor in many Bulgarian and Romanian dishes. It is easier to grow from seed than most herbs. It reaches 30-45 cm tall. It contains carvacrol, giving it antimicrobial properties. It is a key ingredient in herbes de Provence. It is sometimes called the pepper herb. It loses flavor when dried - use fresh or frozen. It is relatively unknown in American cooking but essential in Eastern European cuisines.
