About Wattleseed
From the Acacia tree, it has been a staple food of Aboriginal Australians for over 40,000 years. The seeds are roasted and ground into a flour with a complex flavor combining coffee, chocolate, and hazelnut. It is extremely nutritious - high in protein, fiber, and low glycemic index. It is used in modern Australian cuisine in ice cream, bread, and desserts. Over 100 Acacia species produce edible seeds. It is one of the most sustainable foods on Earth - Acacia trees fix nitrogen and thrive in arid conditions. The flavor is unique and cannot be replicated. It is gaining international recognition as a superfood.
