About Mustard Seed

One of the oldest spices known - mentioned in Sanskrit texts from 3,000 BCE. Jesus used it as a metaphor: the smallest seed that grows into the largest garden plant. There are three types: yellow (mild), brown (medium), and black (strongest). Dijon mustard was originally made with verjuice (unripe grape juice). The hot taste comes from sinigrin, activated when seeds are crushed and mixed with water. It is a natural preservative and emulsifier. India is the largest producer and consumer. Mustard plasters were traditional decongestants. The seeds contain omega-3 fatty acids. Mustard gas was named for its smell, not its ingredients.
