About Watercress

Called the cure of cures by Hippocrates. It is the most nutrient-dense vegetable according to the CDC, scoring 100/100 on the nutrient density index - higher than spinach, kale, or any other vegetable. It grows only in clean flowing water, making it a water quality indicator. Roman soldiers ate it to prevent scurvy. It contains PEITC, a compound being studied for anti-cancer properties. It was a staple food in Victorian England, sold by watercress sellers on street corners. It is one of the oldest known leaf vegetables consumed by humans. It pairs with eggs, especially in sandwiches. It requires constant fresh water to grow.
