About Wasabi

Real wasabi is one of the most expensive plants on Earth - $160 per kg. Almost all wasabi served in restaurants is actually colored horseradish, mustard, and starch. True wasabi (Wasabia japonica) loses its flavor within 15 minutes of grating. It requires clean, cold, flowing water to grow, making cultivation extremely difficult. It has been cultivated in Japan for over 1,000 years. It contains isothiocyanates with demonstrated anti-cancer properties. The heat is different from chili - it affects the nasal passages rather than the tongue. The leaves and stems are also edible. It is related to horseradish and cabbage. Japan produces 80% of world supply.
