About Parsley
The worlds most popular garnish and one of the most nutrient-dense foods available. It contains more vitamin C than oranges, more vitamin K than any other food, and significant amounts of vitamin A, iron, and folate. Ancient Greeks associated it with death and used it in funeral rites - the phrase deu selino (needs parsley) meant someone was near death. Curly and flat-leaf (Italian) are the main types. It is a biennial, producing leaves the first year and flowers the second. It is one of the few herbs that benefits from being eaten rather than just used as garnish. Chewing it neutralizes garlic breath.
